CyberColloids was contacted by a small company who was trying to make vegetarian, gluten-free burgers but were having difficulty getting the burgers to bind.
Gluten-free, vegetarian burgers were produced in the laboratory at Cybercolloids using a number of binding systems. These binding products are organic and label-friendly. The most effective binding system was then identified by analysing the vegetarian burgers through cooking and sensory analysis to determine which gave the best bind strength. The use of these binders is not exclusive to vegetarian products as Cybercolloids has also had great success in binding beef and fish burgers using similar binding products.
